I was born in Australia to Polish parents. They taught me that the simple things in life are to be treasured.
At an early age I showed an appreciation for 'real' things re: quality products - you get what you pay for - fresh produce, people with personality - whatever their background.
After completing my apprenticeship as a Chef, I spent 10 years in Canada refining my knowledge in many different styles of restaurants from Fine Dining, Corporate to multi venue chain restaurants.
I have owned 4 businesses prior to Eschalot. This one is me.
I have a love for Eliza, my Border Collies, travel, music, food & wine (obviously), skiing and my Ducati..
